Vegan, Gluten Free Banana Muffins

INGREDIENTS:

  • 3 medium extra ripe bananas
  • 3 tbsp flax seed + 1 tbsp water
  • 2 tbsp applesauce
  • 1/3 C water
  • 2 C Vegan Simply Vanilla mix
  • 1/4 C stevia
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tbsp chocolate chips chips (optional)

  

DIRECTIONS:

  1. Preheat oven to 350°F
  2. In a bowl mix mashed bananas, flax/water mix, apple sauce and water. 
  3. Add baking mix, stevia, cinnamon and nutmeg. Mix well.
  4. Stir in chocolate chips or any other fun mix-ins
  5. Spray muffin tin with nonstick spray and fill half way with batter
  6. Place in oven and bake at 350°F for 20 minutes
  7. Remove, cool and enjoy!
