*With Chocolate Chips
- 3 medium extra ripe bananas
- 3 tbsp flax seed + 1 tbsp water
- 2 tbsp applesauce
- 1/3 C water
- 2 C Vegan Simply Vanilla mix
- 1/4 C stevia
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tbsp chocolate chips chips (optional)
- Preheat oven to 350°F
- In a bowl mix mashed bananas, flax/water mix, apple sauce and water.
- Add baking mix, stevia, cinnamon and nutmeg. Mix well.
- Stir in chocolate chips or any other fun mix-ins
- Spray muffin tin with nonstick spray and fill half way with batter
- Place in oven and bake at 350°F for 20 minutes
- Remove, cool and enjoy!
